I love to make quiche for breakfast. It is so easy to make a pie ahead of time and then slip a piece in the microwave to enjoy in the morning.
Usually, I love a good savory pie with sausage or bacon served with a fresh tomato. Today, however, I found a neat recipe that I adapted for a sweet quiche.
Funny story-when we were younger and my sisters, mother, and I were just beginning to explore this whole cooking thing, a product came out that was a quiche in a milk carton. All you had to do was pour it in a pie shell, bake it, and out came a mediocre quiche. One of my sisters saw the carton with the strange word quiche on it. Later, while we were eating the mediocre quiche, she asked why we were having a quickie.
We laugh every time we think about it. Maybe you had to be there.
At any rate, I hope you try this easy and sweet quiche and enjoy a little quickie (or quiche) in the morning.
The recipe:
1 pie crust. I do not make my own. That task is overrated.
¾ c flour
¼ c sugar times 2
2 sticks of butter, softened
½ t cinnamon
½ t almond extract-try not to spill it all over yourself as I did. Slippery stuff, it is.
½ t vanilla extract
3 eggs
1 pound cottage cheese or, in other words, 3/4 of a large container. I used small curd.
Using a hand mixer, mix the flour, ¼ c of sugar, half a stick of butter, and the cinnamon. In a separate bowl, mix the other ¼ c of sugar and the stick and a half of remaining butter. Add the eggs, one at a time. Add the extracts and the cottage cheese. Combine the flour into the egg mixture slowly. Mix well and pour into the pie crust. Sprinkle a little cinnamon sugar on top for good measure if you like.
I baked mine in a water bath. I bake everything these days in a water bath. I just think it adds a custardy touch that I like. Bake with or without a water bath for one hour.
Allow to cool completely before you slice.
Warm in the microwave for about twenty-five seconds in the morning before you go to work.
A great way to start the day.
