What does one do with free squash?
Fry it? Make a gross casserole? Put in under your pillow and hope for the best?
Tonight, I made squash croquettes. They were easy and quick. I had never made them before, so I had no expectations. I was pleasantly surprised.
2 c. Chopped squash
1 small onion, chopped
1 egg, beaten
1/2 c flour
Mix everything together. Refrigerate for fifteen minutes. Drop by the spoonful into hot oil. Turn once. Remove when they are light brown, drain on paper towels, and season with extra salt.
To me, these were a cross between fried squash and a hushpuppy. They were a crispy way to use all the squash we have.
