Other than frying these babies, my good Southern momma uses this recipe for green tomatoes often. It is an acquired taste, but I like it.
Two green tomatoes, sliced thick-about 1/2 an inch
1 cup of sharp Cheddar cheese
2 T butter
Grease a casserole dish. Layer the tomatoes around the bottom. Cover the tomatoes with the cheese. Add pats of butter along with a dash of salt and pepper. Bake at 350 for 20 minutes then finish under the broiler for two minutes to brown the cheese.
